delicious pancake cake recipe

Matt and I made this pancake cake together last night for my birthday and it was too good not to share! I took the recipe from here but found the pancakes werent quite as light and fluffy as I would have liked so will make a few changes next time. I think adding SR flour and beating with an electric beater will be the way to go!

Be warned - these pancakes are delicious and if you aren't a fan of overly sweet recipes you can always skip the glaze and serve your pancake cake with fresh fruit, lemon juice or anything else that takes your fancy. Next time I make this I will be serving with a salted maple sauce, crispy bacon and banana .... droolworthy!

1 cup of pancake mix
1 cup vanilla cake mix
1/2  cup SR flour
2 eggs
1 teaspoon vanilla essence
1 cup milk
5 tablespoons of sprinkles

1 tablespoon melted butter
2 tablespoons milk
1 1/2 cups icing sugar

Mix all of the pancake ingredients together in a large bowl with an electric beater until mixture is combined. Scoop 3/4 cup mixture onto a pan (which has been lightly sprayed with oil) and cook on medium heat as you would cook a normal pancake. Flip when golden brown.
Melt butter in a separate bowl. Add milk and mix until combined. Add icing sugar 1/2 cup at a time and mix until smooth. Add more milk or icing sugar until mixture is your desired consistency.
Stack pancakes on a plate or cake stand. In between each pancake drizzle a few spoonfuls of glaze. Pour remaining glaze over the top of the cake and serve with maple syrup, sprinkles and strawberries.
