choc chip and nutella cookie sandwich


 Last week I was scrolling through my Instagram feed when a giant tub of Nutella popped up. Not one to resist the amazing hazelnut-chocolatey goodness of Nutella, I brainstormed a few recipe ideas in my head and quickly popped into the shops to pick up my ingredients.

These choc chip and nutella cookie sandwiches are SO easy to make and really delicious. If you are stuck for time you can even use the premade cookie dough mixture and noone will know any wiser ;). The cookies on their own are really soft and moreish - you may have to stop your hubby or kids from devouring a few during the cooking process!

If you are absolutely crazy and don't like Nutella (or have a nut allergy), you can substitute the filling for raspberry ganache, salted caramel or even plain vanilla frosting. But seriously ... who doesn't like Nutella!!!


Ingredients
125g melted butter
1 cup brown sugar
1/4 cup caster sugar
1 egg, lightly beaten
1 tsp vanilla essence
1 cup self raising flour
3/4 cup plain flour
1 tsp baking powder
1 cup choc chips
Pinch salt


Filling
50ml cream
3/4 cup nutella
2 cups icing sugar
Pinch salt

Method
Preheat oven to 180 degrees celsius
Mix butter and sugar together in a large bowl until smooth
Add vanilla essence and egg to the sugar mixture
Sift flours and baking powder together and gradually mix into the sugar mixture until combined
Stir through chocolate chips
Arrange dough in small rounds on lined baking trays, sprinkle with sea salt and mark with a fork
Bake for 10-15 minutes or until golden (but still soft) an allow to cool for 5 minutes before transferring to a wire rack to finish cooling completely

Filling
Mix cream and nutella together until combined
Gradually add sifted icing sugar and salt into the nutella mixture until smooth
Pipe mixture onto one cookie and sandwich together with another cookie
Place into the refrigerator for an hour to harden (you may be able to skip this step depending on the consistency of your filling and how long you have left the cookies to cool)

Serve with a big cup of english breakfast tea (or orange juice for the little ones)!
