blogmas day twenty three ... skinny pasta recipe

Today's post is a quick and easy recipe that the whole family will love.

I had some leftover broccoli sitting in the fridge that I needed to use up so thought I would throw it together with some pasta and turn it into a yummy dinner.

I failed as a blogger and forgot to take a picture so this one is from Taste
Ingredients:
300g penne pasta
1 jar tomato passata
1 garlic clove
200g ricotta
200g mozzarella
200g Parmesan cheese
5 slices pancetta diced (you could also use good quality leg ham or bacon)
1 broccoli cut into small pieces

Method:
Steam broccoli 
Cook pasta until al dente
Fry onion until brown, add garlic, add passata sauce and bring to boil, reduce to a simmer for 5 minutes
Mix together pasta, broccoli and sauce and pour into a large baking dish
Layer cheeses and pancetta on top of pasta
Cook in oven on 180 degrees Celsius for 10 minutes or until cheese is melted and starting to brown
Serve immediately with a fresh side salad!
